
A package of shredded coleslaw mix in the produce department of your grocery store is usually priced at under $1 a bag. It's convenient, inexpensive, nutritious, and can be used to make some quick and tasty meals.You can see the nutrition facts for a bag of Fresh Express coleslaw at the bottom of this article.
These recipes are all tested by my family and cost less than $5 to make.

Crunchy Ramen Salad
1 pack ramen noodles
1/2 pkg. shredded coleslaw mix
2 Tablespoons of sugar (or 1 tablespoon sweetener such as Equal, Sweet & Low)
1/2 teaspoon of pepper
2 Tablespoons of red wine vinegar (or use seasoned rice wine vinegar)
1/2 cup of oil
1/2 teaspoon of pepper
2 Tablespoons of red wine vinegar (or use seasoned rice wine vinegar)
1/2 cup of oil
First make the dressing by whisking together the sugar,pepper, red wine vinegar, and oil.
Pour 1/2 bag of the coleslaw mix into a large bowl, wash and drain.
Break the package of ramen noodles into small pieces.
Mix together the coleslaw, dressing, and ramen noodles.
**If you like, add chopped chicken, sesame seeds, or almond slivers.
````````````````````Mexican Pizza for Four
8 Tostadas-2 Tostadas per person (found in the tortilla section)
1/4 cup shredded cheese
1 small can refried beans
1 cup coleslaw mix
1 small can chopped tomatoes( I like Italian seasoned)
Spread the refried beans on each tostada. Sprinkle in shredded cheese. Microwave each pizza for about 1 minute, until cheese is melted. Remove from microwave and top with coleslaw and chopped tomatoes.
We usually eat 2 Mexican Pizzas per person.
`````````````````````Crunchy Lettuce Wraps
1/2 head green or red leaf lettuce -"the wrap"
1/2 bag coleslaw mix-washed and dried, in a large bowl
1 cup chopped chicken or pork
Dressing ingredients:
1 tablespoon mayonnaise or salad dressing
Dash of tabasco, season to your liking
1/2 cup apple cider or seasoned rice wine vinegar
1 teaspoon yellow mustard
1 teaspoon honey
Wash as many whole lettuce leaves as you will use for wraps.
Mix together the dressing mix, and pour it over the coleslaw mix.
Add the chopped chicken or pork, and toss well.
To make wraps, spoon the coleslaw mix onto the lettuce leaves, fold and eat.

Southwest Barbecue Wraps
Corn or Flour Tortillas ,warmed-1 or 2 per person
1/2 can corn kernels, rinsed and drained
1/2 can black or pinto beans,rinsed and drained
1 cup coleslaw
3 tablespoons barbecue sauce
2 cups cooked white or brown rice
1 1/2 cups chopped meat-poultry, beef, or pork
Mix together in a medium bowl the corn, beans, coleslaw, and barbecue sauce to make a relish.
Spread the relish in the center of the tortilla and top with the chopped meat.
Roll them up and serve immediately.

Fish Tacos
Crisp taco shells or soft tortillas-1 or 2 per person
2 cups fish, cut into bite sized pieces
Use whatever fish you have. Even fishsticks will work, just cut them into small pieces
1 cup coleslaw
1 apple, cut into bite sized pieces
Dressing:
Mix together in a large bowl:
2 tablespoons Mayonnaise or Miracle Whip
1 tablespoon oil
1 teaspoon any vinegar
Dash of sugar
1/2 teaspoon pepper
Add the chopped apple and coleslaw to the dressing after it is mixed.
Spread the coleslaw mixture into the taco or tortilla and add the cooked fish.
Serve immediately and enjoy the crunch.

Asian Citrus Crunch Rice Bowls
1 small bowl steamed white or brown rice per person
4 chicken thighs, cooked, deboned and shredded
1/2 cup coleslaw, rinsed and drained
1/2 cup chopped broccoli
1 orange, peeled and sectioned
Top each rice bowl with the shredded chicken, coleslaw, chopped broccoli, and orange slices
Serve with hot sauce or teriyaki sauce
