
I have been in the mood for soup lately. Yesterday at the grocery store, I bought a big bunch of leeks for .49 cents, planning to make some soup. I was reading some blogs that I subscribe to, and Charlotte at Catholic Cuisine posted a recipe for Potato Leek Soup. I made a pot for dinner, and it was heavenly. It is so simple to make, and it is very easy on the budget. It's going to be a family staple at our house.
Another recipe that I tried this week was Marva's Brunswick Stew. It's posted on Marva's blog, Blessed Frugalness Times Two. This is a down-home, stick to your ribs, hearty stew. It's easy as pie to prepare, very inexpensive, and packed with flavor. My family loved it. The kids even had seconds!
Anjie at Pom Pom Emporium made me very happy! She has a wonderful recipe for
Butter Bean and Carrot Soup. My husband came home for lunch today, and we enjoyed this fragrant and filling soup with some old fashioned biscuits. This recipe is perfect for those" I need a meal quick!"occasions. It cost me less than $3 to prepare this delicious soup with biscuits meal.
Michelle at PB & J Or Else has a recipe for Taco Soup that is super easy to make. It's got that southwest flavor and zing that I love. My family loved the Taco Soup. We crumbled warm corn totillas over it. YUM-O! You've got to try it! It's a great soup to make when you're entertaining or just for a nice meal at home.

Here's what we're having for dinner tonight:
Spinach Tortellini Soup
3/4 cup chopped onion
1 teaspoon minced garlic
1 tablespoon olive oil
2 cans (14 oz.) chicken broth
2 cups water
1 teaspoon sugar or equal
1/4 teaspoon salt
1/4 teaspoon pepper
1 small package of your favorite tortellini -we like mushroom(about $2.50 a pkg. frozen)
1 can (15 oz.) diced tomatoes, undrained
1/2 package (8 oz.) frozen chopped spinach, thawed - or 1 bunch fresh, washed and chopped
Directions:
1 teaspoon minced garlic

1 teaspoon sugar or equal
1/4 teaspoon salt
1/4 teaspoon pepper
1 small package of your favorite tortellini -we like mushroom(about $2.50 a pkg. frozen)
1 can (15 oz.) diced tomatoes, undrained
1/2 package (8 oz.) frozen chopped spinach, thawed - or 1 bunch fresh, washed and chopped
Directions:
In a large saucepan, saute onion and garlic in oil until tender. Add the broth, water, sugar, salt and pepper. Bring to a boil. Add tortellini; cook for 7-9 minutes or until tender, stirring occasionally. Reduce heat. Stir in tomatoes and spinach; cook on low for 10 minutes, or until well heated.
Makes 2 quarts of soup.
Soup is filling and healthy~enjoy!
