
This soup is creamy and extremely delicious. It's a great way to get extra fiber into your family's diet. It's so tasty they'll never know that it's good for them. Soup's on!
Velvety Cream of Cauliflower Soup
1 tablespoon olive oil
1 small onion, finely chopped
1 teaspoon crushed garlic or 1/2 tablespoon garlic powder
2 teaspoons ground coriander
1 teaspoon ground cumin
1/4 teaspoon chilli powder
1 /2 large head of cauliflower, trimmed, cut into florets or 1 bag frozen
2 cups vegetable or chicken broth
2 cups water
1/4 cup milk
1 tablespoon olive oil

Stir corn starch into milk, set aside.
Heat oil in a saucepan over medium heat. Add onion and garlic. Cook while stirring, for 6 to 7 minutes or until very soft.
Add coriander, cumin and chilli powder. Increase heat to high. Cook, stirring, for 2 minutes. Add cauliflower, broth and water. Cover. Bring to a boil. Reduce heat to low. Simmer for 20 minutes or until cauliflower is tender. Set aside for 15-20 minutes to cool. You will blend cooled soup in a blender.
Blend soup in batches until smooth. Return to saucepan. Stir in milk and cornstarch mixture.

Cook over low heat for about 5 minutes, until hot and thick.
Serve with bread or biscuits and a green salad for a healthy meal.
