
Serve your family a festive and frugal meal of Lime Cilantro Chicken Fajitas with this recipe.
1 pound boneless skinless chicken breasts, sliced into strips
1 small onions cut into wedges
1/2 green bell pepper cut into 1/2 inch strips
3 small limes

1 teaspoon dry ginger
3 tablespoons chopped fresh cilantro
1 teaspoon soy sauce

6 flour tortillas

Squeeze the juice from the limes and set aside. Cut the lime skin into very small pieces or use a shredder.
Heat a large pan over medium heat until hot. Add the cooking oil and chicken . Cook and stir frequently until the chicken is done. Add the ginger and onions and continue cooking until the onions are just turning soft.
Now you can add the shredded lime peel, juice and the cilantro. Stir and add the sugar and soy sauce.
