Meringue Cookies Recipe

Meringue Cookies are so easy to make. The secret is to make sure there is absolutely no egg yolk in your egg whites. Enjoy!

Meringue Cookies Recipe-Fluffy and Simple Sweets!

3/4 cup slivered almonds-optional if you do not care for nuts
1/4 cup confectioners' sugar
3 egg whites, with no trace of yolk-any yolk will cause meringue to not fluff
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup granulated sugar

Directions:
-Preheat oven to 350°. Spread almonds on a cookie sheet and toast 5 minutes. Cool, then chop. In a small bowl, coat 1/2 cup almonds with confectioners' sugar, reserving remaining 1/4 cup for garnish.
-Reduce oven to 225°. Wet a paper towel with white vinegar and wipe the bowl and whisk of a mixer to insure that there is no egg yolk on them from any previous baking. Place egg whites in bowl, add cream of tartar and salt, then whisk on medium-high speed until foamy, about 1 minute. Gradually add granulated sugar while whisking, until meringue is glossy and forms stiff peaks, about 2 minutes. Gently fold in the sugared almonds with a spatula. Drop tablespoons of batter onto a cookie sheet. Bake 1-1/2 hours. Turn oven off. Let meringues stand in closed oven with the light on at least 4 hours or overnight. Garnish with the remaining almonds. Store in an airtight container. Makes 2 dozen cookies. You can add a drop of food color to your mix if you want pastel meringues.

Stir Fried Cabbage and Noodles- Feed the Family for Under $5.00!

This meal is easy to prepare, and the cost is under $5 to feed the entire gang. It's healthy and frugal. I'm working hard at getting my grocery bill lower, and this is one of my family's favorite dishes. Give it a try!

This serves 4 to 6 people, and is great with buttered toast or biscuits.

STIR FRIED CABBAGE AND NOODLES
1 head of cabbage
1 stick of margarine or butter
1 lg. bag egg noodles or any noodles
Salt and pepper to taste

Leftover meat or poultry

a cooked sausage link or 1 lb. ground turkey.
OR
go meatless and add more vegetables!
Cut the cabbage in half and slice it, then slice into 1" wide pieces. Heat a large skillet, add the stick of butter or margarine, add the cabbage,and stir fry until the cabbage is soft.

Cook the noodles in a large saucepan with water. Drain the noodles when done cooking.

Add the noodles to the skillet with the cabbage, stir together over low heat.

Add salt and pepper to taste. add your heated leftover meat or poultry, or add cooked sausage links or ground turkey. Serve hot, and enjoy!

I love to serve this during our yearly Super Bowl party!

Tamale Pie Recipe
1-1/2 lb. ground turkey or hamburger

1 onion, chopped

1 red bell pepper, chopped

2 cups stewed tomatoes

1 small can tomato paste

2 cups whole kernel corn

1 cup sliced black olives

1 tsp. salt

1/4 tspn. garlic powder

1/4 tsp. pepper

1 tbsp. chili powder

Crust:

1 1/2 cups milk

1/2 cup cornmeal

2 tbsp. butter

1 tsp. salt

2 eggs, beaten

2 cups shredded cheese

In a large skillet,thoroughly cook the ground meat. If you use hamburger, drain the fat out of the pan before proceeding. Add the onion, stewed tomatoes, tomato paste, corn, olives,bell pepper, and seasonings and stir together. Continue cooking until all ingredients are heated through. Pour into a well greased 8 x 12 inch baking dish. Set aside.

In a large bowl, mix together the the milk, cornmeal, butter and salt. Pour the mixture into a large pan and cook over medium heat until the mixture is thick and sticky. Add the eggs and cheese to the pan, mix well and pour over meat mixture in the baking pan.

Bake at 350 for approximately 50 minutes; until top is a golden brown. Sprinkle with cheese and serve.

We are all trying to eat a little healthier these days. Here is a tasty recipe, high in fiber and low in fat and low in calories!

Healthy Red Beans and and Rice-Low Fat & Low Calorie

1 lb Dry red kidney beans
2 1/2 c. Celery, finely minced
2 Green bell peppers, seeded & finely minced
2 medium Onions, finely minced
2 Bay leaves
1 chopped Tomato
salt and pepper to taste

Directions

Cover beans with water (2-inches above beans). Let soak all day or possibly overnight. Drain, then replace water just to cover the beans. Add the vegetables. Bring to boil, reduce heat to simmer for about 45 min. until beans are cooked and soft.
Add salt and pepper to taste
Serve with cooked rice.
Makes 8 servings.

Make these Almond Bark Oreo Balls
Ingredients

1 package Regular Oreos
1 package Cream Cheese
1 bar White Almond Bark
1 bar Chocolate Almond Bark

Directions
Smash up the oreos. Keep smashing until they look like dirt. With a mixer, mix soft cream cheese and smushed oreos. Put the oreo mix in the freezer for 30 mins. Next, melt 3/4 of the white almond bark in the microwave. Next, melt 1/4 of the chocolate almond bark. Remove the oreo mix from the freezer. Roll the mix into almond sized balls. With a toothpick, dip ithe balls, one by one, into the melted white almond bark and let sit on wax paper until dry. Pour the melted chocolate almond bark in a ziplock bag, cut off the corner and drizzle on the oreo balls. Refrigerate for 30 minutes and they are ready to serve.

APPLE DUMPLINGS

1 c. sugar

1 c. water

1/8 tsp. Cinnamon

1/8 tsp. Nutmeg

2 drops of red food coloring

2 Tbsp. Butter or margarine

6 whole apples sliced,peeled,and cored

2 c. enriched flour

2 tsp. Baking powder

1 tsp. Salt

2/3 c. shortening

1/2 c. milk

Directions::

Combine sugar, water, cinnamon, nutmeg, and food coloring. Bring to a boil. Add butter. Sift together flour, baking powder, and salt; cut in shortening. Add milk all at once and stir until moistened. Roll 1/4 inch thick on lightly floured surface. Cut with pastry knife into 6 inch squares.
Place 1/2 apple in center of each square. Sprinkle each apple with sugar, cinnamon, and nutmeg. Dot with butter. Fold corners to center and pinch edges together. Place 1 inch apart in greased baking pan. Spoon the syrup over the top of dumplings. Sprinkle with sugar. Bake in oven (375) for 25 minutes. Great with ice cream and jam.

No-Knead Golden Crust Bread Recipe
You will need:
3 cups all-purpose or bread flour, set aside more for dusting
¼ teaspoon instant yeast
1¼ teaspoons salt
1 5/8 cups water
Cornmeal or wheat bran as needed -for more dusting
A large 3 1/2 to 5 qt. covered ceramic or Pyrex casserole or covered cast iron pot
Heavy duty pair of oven mitts
2 cotton towels-not terry cloth
Plastic wrap

1. In a large bowl combine flour, yeast and salt. Add 1 5/8 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.
2. Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes.
3. Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal. Cover with another cotton towel and let rise for about 2 hours. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.
4. At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic casseole dish) in oven as it heats. When dough is ready, put on a pair of heavy-duty oven mitts and carefully remove pot from oven. Slide your hand under towel covering dough and turn dough over into pot, seam side up. It will not look pretty, but that is fine. The dough will even out as it bakes. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is a golden brown. Cool on a rack.
This makes a 1 1/2 pound loaf.

I grew up eating this Fruit Cocktail Cake every weekend. My Grandma loved to bake it, in fact she loved anything with fruit cocktail!

FRUIT COCKTAIL CAKE

1 cup flour

1 cup sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 egg

1 teaspoon vanilla

1 15.25 ounce can fruit cocktail with juice (about 1 1/2 cups)

1/4 cup brown sugar

1/2 cup almond slivers

In large mixing bowl, combine flour, sugar, baking soda, and salt. Then add 1 egg and 1 1/2 cups fruit cocktail, juice and all from can, plus the vanilla. Mix together. Spread in greased 9-inch pan. Sprinkle brown sugar and nuts on top. Bake at 350 for 30 minutes. Top with whipped cream if you wish.

Chocolate rum balls make a very nice gift when presented in a glass or plastic airtight jar or a pretty tin and wrapped with a ribbon. For a nice and sparkly effect, roll a glue stick over a jar and sprinkle on some glitter.

Easy Chocolate Rum Balls Recipe

1 box (12-oz. size) Vanilla wafers, in crumbs

1 1/2 cup Chopped nuts

3/4 cup Powdered sugar

1/4 cup Cocoa Powder

1/2 cup rum or rum flavor

or use 1/2 cup of orange juice

3 tablespoons light corn syrup

1/2 cup Powdered sugar to roll balls in

Directions:

Using a large bowl, combine crumbs, nuts, powdered sugar and cocoa. Add rum and corn syrup; blend well. Shape into 1-inch balls; roll in powdered sugar. Store in airtight container 2 to 3 days to bring out the flavor. Roll balls in powdered sugar before serving.

Banana Scallops Recipe

Banana Scallops are a wonderful little dessert that you can whip up in just a few minutes. They make an elegant presentation, and are a hit with both childen and adults.

Banana Scallops

6 green-tipped bananas (for firmness)

¼ cup evaporated milk

½ teaspoon salt

4 teaspoons sugar

¾ cup bread crumbs on a large platter

1/2 cup olive oil in a heated skillet

Peel bananas and slice into 1 inch circular pieces

In a large bowl, combine the milk, sugar, and salt.

Dip the banana slices in the milk mixture.

Roll the banana slices into the bread crumb mixture until well coated.

Pan fry the coated banana slices for about 2 minutes or less, until the outside is a lite brown and the bananas are hot.

Serve your banana scallops with ice cream if you wish. I like to serve just the banana scallops in a pretty little dessert bowl and drizzle with chocolate or strawberry syrup or a favorite liquer.

Green Bean Casserole Recipe

2 cans Condensed Cream of Mushroom Soup

1 cup milk

2 teaspoons soy sauce

1/4 teaspoon ground black pepper

8 cups cooked cut green beans- I use 2 16 oz. bags of frozen beans

2 2/3 cups French's French Fried Onions

Stir the soup, milk, soy sauce, black pepper, beans and 1 1/3 cups onions in a 3-quart casserole.

Bake at 350°F. for 25 minutes or until the bean mixture is hot and bubbling. Stir the bean mixture. Sprinkle with the remaining onions.

Bake for 5 minutes or until the onions are golden brown.

Quick Chocolate Fudge Recipe
1 (12oz) pkg (2 cups) semi-sweet chocolate chips
1 can Chocolate Fudge Creamy Supreme Frosting
1-1/2 cup miniature marshmallows
3/4 cup chopped mixed nuts-optional
Line an 8" square pan with foil, extending foil over edges, and lightly butter the foil.
Melt chips in large saucepan over very low heat, stirring until smooth. Remove from heat and stir in frosting. Add marshmallows and nuts, mix until well coated. Spread in buttered pan, and chill until firm (about 1 hour). Remove from pan by pulling up foil,and cut into squares. Yummy fudge!

Six Meals Under $5 Made Using A Bag Of Coleslaw

A package of shredded coleslaw mix in the produce department of your grocery store is usually priced at under $1 a bag. It's convenient, inexpensive, nutritious, and can be used to make some quick and tasty meals.You can see the nutrition facts for a bag of Fresh Express coleslaw at the bottom of this article.

These recipes are all tested by my family and cost less than $5 to make.

Crunchy Ramen Salad

1 pack ramen noodles

1/2 pkg. shredded coleslaw mix

2 Tablespoons of sugar (or 1 tablespoon sweetener such as Equal, Sweet & Low)
1/2 teaspoon of pepper
2 Tablespoons of red wine vinegar (or use seasoned rice wine vinegar)
1/2 cup of oil

First make the dressing by whisking together the sugar,pepper, red wine vinegar, and oil.

Pour 1/2 bag of the coleslaw mix into a large bowl, wash and drain.

Break the package of ramen noodles into small pieces.

Mix together the coleslaw, dressing, and ramen noodles.

**If you like, add chopped chicken, sesame seeds, or almond slivers.

Mexican Pizza for Four

8 Tostadas-2 Tostadas per person (found in the tortilla section)

1/4 cup shredded cheese

1 small can refried beans

1 cup coleslaw mix

1 small can chopped tomatoes( I like Italian seasoned)

Spread the refried beans on each tostada. Sprinkle in shredded cheese. Microwave each pizza for about 1 minute, until cheese is melted. Remove from microwave and top with coleslaw and chopped tomatoes.

We usually eat 2 Mexican Pizzas per person.

Crunchy Lettuce Wraps

1/2 head green or red leaf lettuce -"the wrap"

1/2 bag coleslaw mix-washed and dried, in a large bowl

1 cup chopped chicken or pork

Dressing ingredients:

1 tablespoon mayonnaise or salad dressing

Dash of tabasco, season to your liking

1/2 cup apple cider or seasoned rice wine vinegar

1 teaspoon yellow mustard

1 teaspoon honey

Wash as many whole lettuce leaves as you will use for wraps.

Mix together the dressing mix, and pour it over the coleslaw mix.

Add the chopped chicken or pork, and toss well.

To make wraps, spoon the coleslaw mix onto the lettuce leaves, fold and eat.

Southwest Barbecue Wraps

Corn or Flour Tortillas ,warmed-1 or 2 per person

1/2 can corn kernels, rinsed and drained

1/2 can black or pinto beans,rinsed and drained

1 cup coleslaw

3 tablespoons barbecue sauce

2 cups cooked white or brown rice

1 1/2 cups chopped meat-poultry, beef, or pork

Mix together in a medium bowl the corn, beans, coleslaw, and barbecue sauce to make a relish.

Spread the relish in the center of the tortilla and top with the chopped meat.

Roll them up and serve immediately.

Fish Tacos

Crisp taco shells or soft tortillas-1 or 2 per person

2 cups fish, cut into bite sized pieces

Use whatever fish you have. Even fishsticks will work, just cut them into small pieces

1 cup coleslaw

1 apple, cut into bite sized pieces

Dressing:

Mix together in a large bowl:

2 tablespoons Mayonnaise or Miracle Whip

1 tablespoon oil

1 teaspoon any vinegar

Dash of sugar

1/2 teaspoon pepper

Add the chopped apple and coleslaw to the dressing after it is mixed.

Spread the coleslaw mixture into the taco or tortilla and add the cooked fish.

Serve immediately and enjoy the crunch.

Asian Citrus Crunch Rice Bowls

1 small bowl steamed white or brown rice per person

4 chicken thighs, cooked, deboned and shredded

1/2 cup coleslaw, rinsed and drained

1/2 cup chopped broccoli

1 orange, peeled and sectioned

Top each rice bowl with the shredded chicken, coleslaw, chopped broccoli, and orange slices

Serve with hot sauce or teriyaki sauce
